Rabbit Meat
Rabbit meat is very healthy. It is a fine grained white meat that tends to be more moist than chicken breast. Rabbit meat is lower in cholesterol and fat, and higher in protein than chicken, turkey, beef, and pork. It also has a very low bone to meat ratio, meaning pound per pound you are getting more meat to enjoy.

Rabbit meat is easy to cook with. You can use much in the same way you would cook chicken. It is great in stew, on the BBQ, slow cooked in the crook, you name it.
Here is a simple recipe:

| 1 rabbit, cut into pieces 1 Tbsp flour 1 C water 1 tsp salt 1/2 C white wine |
4 Tbsp butter 1/2 clove garlic, sliced 1/4 tsp thyme 1/4 tsp black peper 1 bay leaf |
| Blend butter and flour in a skillet and brown rabbit pieces on all sides, turning often; add remaining ingredients; cover and simmer for 45 minutes or until rabbit is tender. Adapted from 1001 Ways To Cook Rabbit, Bob D. Whiteman, 2005 |
